Healthy GingerBread Cookies

Ingredients
  • - 2 cups sprouted spelt or whole wheat flour
  • - ¼ cup coconut flour
  • - ¼ teaspoon of sea salt
  • - 1 Tbsp ground ginger
  • - ½ tsp baking soda
  • - ½ tsp ground cardamom
  • - ½ tsp ground cloves
  • - ½ tsp ground cinnamon
  • - 1tsp vanilla extract
  • - 5 tbsp melted coconut oil, and 2 tbsp of red Palm oil, or 7 tbsp of coconut oil
  • - ½ cup coconut sugar
  • -1/2 cup - ¾ cup Blackstrap molasses
Instructions
  1. - Melt the coconut and red palm oil together wwith the vanilla and molasses
  2. - Sift the dry ingredients
  3. - Combine dry ingredients with wet and fold to combine
  4. - avoid overworking the dough
  5. - wrap the dough in a piece of plastic wrap and refrigerate for ½ an hour
  6. - Preheat oven to 350 F
  7. - Take a half of the dough and roll out in between to sheets of parchment paper
  8. - Cut dough in desired shapes, and place on a lined baking sheet or silpat mat
  9. - Repeat process with rest of the dough
  10. - Bake for bout 10 minutes.
